Try fried mashed locusts instead.
We call it bubble and squeak, but it needs cabbage for that. So I guess yours is an invention after all. Dry fry or deep fry ?
I did that, but it was supposed to be a Spanish omlette. AJ's review was "It's a bit like bubble and squeak but with eggs."
I did it because the potato was a week old and I didn't fancy microwaving it. Was nice. Had fried eggs and mushrooms with it. Shallow fry in olive oil using the one accessible frying pan I've ever found. Yay
